Ingredients
For the Crust:
- 1 ¼ cups all-purpose flour
- ½ teaspoon salt

- 1 large egg
- ¾ cup dark corn syrup

- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
Prepare the Crust:
- In a large bowl, mix together flour, salt, and sugar. Add the chilled butter pieces and use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse meal.
- Sprinkle 2 tablespoons of ice water over the mixture, gently mixing with a fork until the dough starts to come together. Add more water as needed.
- Gather the dough into a ball, flatten it into a disk, wrap in plastic wrap, and chill for at least 1 hour.
Make the Filling:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the egg, dark corn syrup, sugar, melted butter, vanilla extract, and a pinch of salt until smooth. Stir in the chopped pecans.
Assemble the Pies:
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick. Using a round cutter or a glass, cut out circles big enough to fit into the cups of a mini muffin pan.
- Press the dough circles into the muffin cups, ensuring there are no air bubbles.
- Spoon the pecan filling into each dough-filled cup, filling each one about ¾ full. Garnish with a whole pecan if desired.
Bake the Mini Pies:
- Bake in the preheated oven for about 25 minutes, or until the filling is set and the crust is golden.
- Let the pies cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
