🌞 Mediterranean Quinoa Salad Recipe 🥗🍅
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved 🍅
- 1 cucumber, diced 🥒
- 1/2 red onion, finely chopped 🧅
- 1/4 cup crumbled feta cheese 🧀
- 1/4 cup sliced Kalamata olives 🫒
- 2 tablespoons chopped fresh parsley 🌿
- 2 tablespoons olive oil
- 1 tablespoon lemon juice 🍋
- Salt and pepper, to taste
Instructions:
- Prepare the Quinoa:
- Rinse the quinoa under cold running water to remove any saponins.
- In a medium saucepan, combine the rinsed quinoa and water. Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the water has been absorbed.
- Cool & Fluff the Quinoa:
- Remove the saucepan from heat and allow the quinoa to cool. Once cooled, fluff it with a fork to separate the grains, then transfer to a large salad bowl.
- Assemble the Salad:
- Add the halved cherry tomatoes, diced cucumber, finely chopped red onion, crumbled feta cheese, sliced Kalamata olives, and chopped parsley to the bowl of quinoa.
- Dress & Toss:
- Drizzle the olive oil and lemon juice over the salad. Gently toss all ingredients until well combined.
- Season with salt and pepper to taste.
- Serve & Enjoy!
- Serve the salad chilled or at room temperature, perfect as a nutritious meal or a side dish for gatherings.
