🌞 Mediterranean Quinoa Salad Recipe 🥗🍅

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved 🍅
  • 1 cucumber, diced 🥒
  • 1/2 red onion, finely chopped 🧅
  • 1/4 cup crumbled feta cheese 🧀
  • 1/4 cup sliced Kalamata olives 🫒
  • 2 tablespoons chopped fresh parsley 🌿
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice 🍋
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Quinoa:
  • Rinse the quinoa under cold running water to remove any saponins.
  • In a medium saucepan, combine the rinsed quinoa and water. Bring the mixture to a boil over high heat.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the water has been absorbed.
  1. Cool & Fluff the Quinoa:
  • Remove the saucepan from heat and allow the quinoa to cool. Once cooled, fluff it with a fork to separate the grains, then transfer to a large salad bowl.
  1. Assemble the Salad:
  • Add the halved cherry tomatoes, diced cucumber, finely chopped red onion, crumbled feta cheese, sliced Kalamata olives, and chopped parsley to the bowl of quinoa.
  1. Dress & Toss:
  • Drizzle the olive oil and lemon juice over the salad. Gently toss all ingredients until well combined.
  • Season with salt and pepper to taste.
  1. Serve & Enjoy!
  • Serve the salad chilled or at room temperature, perfect as a nutritious meal or a side dish for gatherings.
