Double-Stack Mushroom and Chicken Cheeseburgers

Ingredients:

  • 1 lb crimini mushrooms, halved if large
  • ½ tsp kosher salt (or ¼ tsp Morton kosher salt), plus more to taste
  • 1 lb ground chicken (preferably dark meat)
  • Vegetable oil (for grilling)
  • 1 small onion, sliced into 4 rounds
  • Freshly ground black pepper
  • 8 thin slices of Muenster cheese
  • 4 potato buns
  • 4 Tbsp mayonnaise
  • 4 Tbsp curry mustard (or your favorite mustard)
  • Bread-and-butter pickles & shredded iceberg lettuce for serving

Directions:

  1. Prepare the Mushrooms:
    Pulse mushrooms with ½ tsp salt in a food processor until finely chopped. Alternatively, chop by hand and toss with salt. Let sit for 2 minutes, then wring out excess moisture using a kitchen towel. Save the liquid for another use.
  2. Mix & Form Patties:
    In a large bowl, combine the mushrooms and ground chicken. Mix well and shape into 8 equal balls. Gently form each into a patty about ¼” thick. Set them on a parchment-lined baking sheet.
  3. Grill Onions:
    Preheat the grill to high and lightly oil the grate. Drizzle onions with oil, season with salt, and grill on the cooler edges until softened and charred (about 8 minutes). Set aside.
  4. Grill the Patties:
    Season the tops of the patties with salt and pepper. Grill the patties, seasoned side down, until the edges brown (about 2 minutes), then flip, top with cheese, and cook until cheese is melted and the patties are cooked through (about 2 more minutes). Move them to the platter with the onions.
  5. Toast & Assemble:
    Grill the buns, cut side down, until lightly charred (about 30 seconds). Spread mayonnaise on the bottom buns, add mustard, then layer with pickles, grilled onions, 2 patties, and lettuce. Close with the top buns and serve!
