Ingredients
- 6 medium Yukon Gold potatoes (about 2 lbs), cut into quarters
- 1 medium yellow onion, diced
- 4 slices bacon, chopped
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
1. Boil Potatoes:
- Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-15 minutes until just fork-tender but still quite firm. Drain and set aside to cool slightly.
2. Cook Bacon:
- Heat a large cast iron skillet over medium heat. Add the bacon and fry until crispy, 5-7 minutes. Remove with a slotted spoon and set aside on paper towels.
3. Sauté Onions:
- Pour off all but 1 tablespoon of bacon grease from the skillet. Add the onions and sauté for 5-7 minutes until softened and browned. Remove and set aside with the bacon.
4. Fry Potatoes:
- Return the skillet to medium heat and melt the butter. Once melted, add the boiled potatoes and arrange in a single layer. Fry undisturbed for 2-3 minutes per side until deeply golden brown.
5. Combine Ingredients:
- Return the onions and bacon to the skillet. Add garlic and smoked paprika. Toss gently and continue frying for another 2-3 minutes.
6. Season and Serve:
- Remove from heat. Season generously with salt and pepper. Stir in chopped parsley. Serve immediately while hot and crispy.
