Beef Tips and Gravy

Ingredients:

  • 2 lbs beef tips or stew meat (cut into 1-inch cubes)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon dried thyme
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Beef:
  • Season beef tips with salt and pepper.
  • Heat vegetable oil in a large skillet or Dutch oven over medium-high heat.
  • Brown beef in batches to avoid overcrowding, then set aside.
  1. Sauté the Vegetables:
  • In the same skillet, cook the onion until softened, about 3-5 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  1. Deglaze and Simmer:
  • Return the beef to the skillet.
  • Add beef broth, Worcestershire sauce, soy sauce, and dried thyme.
  • Stir well, scraping up any browned bits from the bottom of the skillet.
  • Simmer on low, covered, for 1.5 to 2 hours, or until the beef is tender.
  1. Thicken the Gravy:
  • In a small bowl, mix cornstarch with water until smooth.
  • Stir the cornstarch mixture into the skillet.
  • Cook over medium heat, stirring constantly, until the gravy thickens, about 3-5 minutes.

  • Adjust seasoning with salt and pepper if needed.
  • Garnish with fresh parsley if desired.
  • Serve over mashed potatoes, rice, or noodles.
