Baked Mashed Potato Pops

Ingredients:

  • 3 cups mashed potatoes (about 3 large potatoes)
  • 2 eggs
  • 1 cup shredded cheddar cheese (or your cheese of choice)
  • 4 tablespoons chopped cooked bacon (optional; can substitute ham or omit for a vegetarian version)
  • 2 tablespoons chopped chives or green onions
  • 2 tablespoons grated Parmesan
  • Salt and ground black pepper, to taste
  • Sour cream, for serving (optional)
  • Additional chopped chives, for garnish (optional)

Instructions:

  1. Prepare the Potato Mixture:
  • In a large mixing bowl, combine mashed potatoes, eggs, shredded cheddar cheese, chopped bacon, chives, and Parmesan. Season with salt and pepper. Mix until well combined and smooth.
  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with baking spray to prevent sticking.
  1. Fill the Muffin Tin:
  • Using a large ice cream scoop or spoon, divide the potato mixture evenly into the muffin cups, filling each about 3/4 full. Smooth the tops with the back of a spoon.
