Ingredients:
- 3 cups mashed potatoes (about 3 large potatoes)
- 2 eggs
- 1 cup shredded cheddar cheese (or your cheese of choice)
- 4 tablespoons chopped cooked bacon (optional; can substitute ham or omit for a vegetarian version)
- 2 tablespoons chopped chives or green onions
- 2 tablespoons grated Parmesan
- Salt and ground black pepper, to taste
- Sour cream, for serving (optional)
- Additional chopped chives, for garnish (optional)
Instructions:
- Prepare the Potato Mixture:
- In a large mixing bowl, combine mashed potatoes, eggs, shredded cheddar cheese, chopped bacon, chives, and Parmesan. Season with salt and pepper. Mix until well combined and smooth.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with baking spray to prevent sticking.
- Fill the Muffin Tin:
- Using a large ice cream scoop or spoon, divide the potato mixture evenly into the muffin cups, filling each about 3/4 full. Smooth the tops with the back of a spoon.
- Bake:
- Place the muffin tin in the oven and bake for 25-35 minutes, until the tops are lightly browned. Check at 25 minutes and continue baking if needed until golden and crispy.
- Cool and Serve:
- Allow the potato pops to cool for 5-10 minutes. Run a knife around the edges of each cup to loosen and gently remove them. Transfer to a serving plate.
- Enjoy:
- Serve warm with a side of sour cream and a sprinkle of extra chives, if desired. Enjoy as a tasty snack or side dish!
Tips:
- Use Leftovers: Leftover mashed potatoes work perfectly for this recipe.
- Customization: Experiment with different mix-ins like ham, sautéed onions, or different cheeses.
- Freezing: Bake and cool completely, then freeze in a single layer on a baking sheet. Transfer to a freezer bag or airtight container. Reheat from frozen at 400°F for 10-15 minutes.
Potato Pun: Why are potatoes good detectives? Because they keep their eyes peeled!
These Baked Mashed Potato Pops are a hit at gatherings or a fun addition to your dinner table. Enjoy!
